Warm Spinach Salad

I made this yummy salad for dinner tonight. I think it is now, our favourite spinach salad. The recipe is from the Whitewater Cooks cookbook.

Recipe

Ingredients:
3/4 cup olive oil
2 garlic cloves, crushed
1 large shallot, diced
1/3 cup prosciutto, chopped
1/3 cup rice or red wine vinegar
1 cup fresh basil, julienned
1/4 cup pine nuts, toasted
1/4 cup fresh parmesan cheese, grated
salt and freshly ground pepper to taste
10 cups fresh spinach washed and dried

Method:
Heat the olive oil in a large skillet on medium heat. Add garlic, shallots and prosciutto and saute until shallots are translucent. Add vinegar, salt and pepper. Keep warm. In a large mixing bowl toss the warm vinaigrette with the spinach and fresh basil. Top with parmesan cheese and pine nuts.
Serve immediately!

Serves 4-6.

I did not add the basil, I cannot get it here in town in the winter.

I made this for christmas eve dinner and everyone loved it, even my fiance who doesn't like salads. This one is definetly a keeper. Well done and thanks.
